Whole Yuca

Yuca, pronounced YOO-ka, is the root of the Cassava plant. Its name is like the southeastern United States desert plant called the yucca (pronounced YUHK-a). It is a starchy vegetable native to South America. Spanish Food Solutions yuca comes from Ecuador and Costa Rica. It is cut, peeled, and frozen. Yuca has a grainy texture similar to potatoes. It is high in carbohydrates and low in saturated fat, cholesterol and sodium. Yuca is a good source of manganese and vitamin C.
